Spicy Valentine’s Day Dinner

I love Indian food, I find it enticing and intimate. There is something about the warmth in the spices and the general atmosphere that it evokes – its perfect for a spicy Valentine’s Day dinner!

This simple, quick Korma dish is mild and made without meat so anyone can enjoy it.  The spices are tasty but actually quite mellow making it the perfect valentine’s meal for even the pickiest love in your life. Follow with a romantic dessert, like as Pavlova or Chocolate Raspberry Truffles.

Ingredients: 

  • 2 TBSP Vegetable Oil
  • 1 small onion chopped
  • 1 tsp ground ginger
  • 1 potato cubed
  • 2 carrots sliced
  • 1/4 cup sunflower seeds
  • 1 can tomato sauce or stewed tomatoes
  • 2 tsp salt
  • 1 head of cauliflower
  • 1 cup of water
  • 1 tsp chilli powder
  • 1 1/2 TBSP curry powder

Instructions:

Blend sunflowers with 1/4 cup of water in a food processor until smooth, remove from processor and stir in the rest of the water. Heat oil in a pan sautee onion and ginger. Add sunflower paste and the rest of the ingredients, heat over medium with the lid on until vegetable are tender. Serve over Jasmine or brown rice and a side of Naan.
