Simple Baked Potato Soup

I am not one for this cold freezing weather. I was raised in the South and I was born where the sunshine doesn’t stop shining.  Yep, believe it or not I’m a Cali girl. And this body (although we moved to NC when I was 18 months old) is just not cut out for these cold, cold temperatures. So thank goodness, for soups, chilli, & crockpots. I am no cook; however, when it comes to crockpots I feel comfortable enough to venture out and try to recipes. Today I bring to you a perfect snow day soup—Baked Potato Soup.

I originally saw this recipe over at Leah’s blog, Simply Made With Love. I made a few minor adjustments and BOOM, perfection in a mug. Why yes, I do prefer my soup in a mug. Judge me!

Baked Potato Soup

Baked Potato Soup 1

Ingredients
2 lbs. peeled & cubed potatoes
1 32 oz box of chicken broth
1 can of cream of chicken soup
1 pkg. cream cheese
3 oz bacon bits
2 cups shredded cheese
Salt & Pepper to taste

Instructions

Place peeled & cubed potatoes in the crockpot. Add chicken broth, cream of chicken soup, half of the bacon bits, and a pinch of salt and pepper. Mix it all together. Let it cook on low for 8 hours (or high for 4-5 hours) until potatoes are soft and tender (I’ve made it twice once on low for 8 & once on high for 5 – both worked great).

An hour before serving add the cream cheese (cut into cubes). Also, add in a cup of the shredded cheese. Mix a few times throughout the hour. Once the cream cheese is completely melted and mixed in, it is ready to serve.

Spoon into your favorite cup or mug, add some shredded cheese and bacon bits on top and ENJOY! This recipe was super easy to make. And my family loved it. Win, win for this chick.

My mom & I also made this recipe for a person at our church who just had surgery. There are many opportunities to give a cooked meal to a person you know and it is such a great way of helping out when there is little else you can do. Whether they just had surgery, lost a loved one, or you just want to brighten their day—they will love you for this perfect wintery soup plus, it’s super easy (if you trust them with your Crockpot for a couple days!)
