With the warm summer months fast approaching, it’s a perfect time to enjoy some fresh salsa. The local farmers’ markets are overflowing with fresh tomatoes, herbs, onions and more. So why not enjoy all of that fresh produce with some great homemade salsa? Best of all is that this recipe tastes even better the next day, giving the flavors a chance to fully meld together.
Ingredients
- 4 medium to large ripe tomatoes (Cored and seeded)
- 2-3 cloves garlic (Peeled)
- 1 medium onion (Peeled)
- ¼ cup of juice from a fresh lime
- 1-2 tablespoons fresh cilantro (Remove stems and chop fine)
- Dash of salt and pepper (To taste)
Directions
Step #1:
Cut 3 of the tomatoes into quarters as well as cut the onion and garlic cloves. Place and blend the cut vegetables and half of the lime juice into a food processor or blender.
Step #2:
Dice the remaining tomato into small pieces and stir into the blender bowl. This will add a chunkier texture to your salsa.
Step #3:
Stir in fresh cilantro to taste. This is usually 1 to 2 tablespoon.
Step #4:
Pour in the remaining lime and add salt and pepper to taste. Then enjoy with crispy tortilla chips or your favorite dish.
Alternative Homemade Cherry Salsa
Spice up your taste buds with an even zestier flavor! Enjoy a cherry salsa, an alternative to the tomato-based salsa. Follow the recipe above, and then simply add one cup of chopped fresh Montmorency tart cherries and a half of tablespoon of Montmorency tart cherry juice concentrate.
