Cooking with Klaus – Grilled Salmon with Potato Leek Patties

Ingredients (for 4 people)

Slightly more than one pound of potatoes
1 leek, finely sliced
2 tablespoons flour
2-3 tablespoons potato starch
1 egg, medium size
1 teaspoon salt
½ teaspoon ground white pepper
1/8 teaspoon nutmeg
4 tablespoons bread crumbs
2 tablespoons margarine
1 lemon, juiced
4 ½ pound pieces of salmon
2 tablespoons olive oil
4 stalks thyme
Aluminum foil for grilling

Preparation for Potato Leek Patties

Boil potatoes in salted water and peel while they are still hot. Cool them for 2 minutes in cold water so they are easier to handle. Mash potatoes, then add leek, starch, egg and seasoning. If the dough is too sticky, add two tablespoons of flour. Make a 2-inch thick roll with the dough. Slice ½ inch thick. Cover both sides in bread crumbs. (This would be a good point to turn the grill on for the salmon.) Heat margarine in a skillet on medium heat.

Cook patties on both sides for 3 minutes. Place in low-heat oven to keep warm while preparing the salmon.

Season Salmon with lemon juice, salt, pepper and thyme. Place each salmon filet in a piece of aluminum foil. Drizzle each piece with olive oil. Close foil and place on medium heat grill. Cook for 3 minutes on both sides.
