Ingredients for 4 people
2 whole pork filets
½ tablespoon margarine
¼ teaspoon salt
¼ teaspoon pepper
1 teaspoon tomato paste
1 cup red wine
2 cups dark cherries, pitted
1 tablespoon sugar
2 cups cherry juice
1 tablespoon potato starch to thicken the sauce if desired
Preparation
In a small bowl pour sugar over cherries. Allow them to sit for 1 hour. Preheat oven to 160 degrees Celsius. In a small pot add cherries and sugar mixture to cherry juice. If you would like your sauce to be a bit thicker, remove some of the cold liquid and add the potato starch to it. Simmer cherries for approximately 8 minutes. During the 8 minutes, add the starch liquid and stir constantly.
Season pork filets. Add margarine to a pan. Heat until margarine bubbles, then add filets. Brown on all sides. Place the pan in oven for 8-10 minutes.
Reduce heat to 50 degrees Celsius. Wrap filets in aluminum foil and return to oven. In the pan where the filets were browned, add tomato paste. Let the paste get nicely brown on a medium heat stove top. Add red wine and a bit of the cherry sauce. Simmer for approximately 2 minutes. Add the remaining cherries and sauce. Season the sauce to taste.
Remove filets from oven and slice in a 45 degree angle. Drizzle the sauce on top to complete this tasty summer treat!
Great side dishes are Spaetzle and a summer salad or home fries.
