Cooking with Klaus – Marinated Strawberries with Mascarpone Cream

Ingredients for 4 people

Slightly more than 1 pound of strawber-
ries, washed and quartered
4 whole mint leaves washed
4 mint leaves finely sliced
10 tablespoons sugar
4 tablespoons balsamic vinegar
250 grams mascarpone
4 tablespoons milk
4 tablespoons lime juice

Mix 4 tablespoons sugar with balsamic vinegar. Marinate strawberries with the vinegar for 10 minutes. Mix mascarpone, milk, lime juice and remaining sugar. In a tall slender glass alternate layers of the Mascarpone mixture and strawberries.
Start with the marcarpone mixture and end with the strawberries. On top, garnish with one mint leaf per glass. The quality of the dish will depend upon the quality of your balsamic vinegar.
There is definitely a difference between a cheap balsamic vinegar and one that is more expensive. You can also add a touch of balsamic marinade to the top layer of strawberries.
