Ingredients (for 4 people)
1 large leek, cut lengthways and then into ¼
inch slices
6 tablespoons oil
1 cup diced Black Forest ham
2 cups elbow noodles, raw
4 cups vegetable broth
2 cups cherry tomatoes, cut in half
Salt, pepper, paprika and chili to taste
1-2 teaspoon dried oregano
¼ teaspoon sugar
1 cup fresh ground parmesan
Preparation
In a large pot heat oil. Add black forest ham and let cook for about 1 minute. Add leak and let cook a further 7 minutes on medium heat. Remove from pot. Put noodles, broth, cherry tomatoes and spices in the pot and let it come to a boil. Reduce to simmer for 10 minutes. Add the leek and ham back into the pot. Now, add spice to match your taste.
Add sugar. Serve in deep dish bowls. Top with parmesan. Ciabatta bread is a nice side dish. Cut the bread in 1 inch slices. Put olive oil and garlic seasoning in a pan. Heat oil to warm. Turn each piece of bread in the oil to have both sides flavored with the garlic olive oil mixture. Serve warm.
