Ingredients (for 4 people)
4 small onions diced
2 cloves garlic, diced
1 pound potatoes, peeled and cubed into
1 inch squares
½ pound carrots, diced in into 1 inch pieces
2 cups celery stalks sliced into ½ pieces
½ pound leek diced into ½ slices
1 pound tomatoes
1 cup dried plums, finely diced
2 tablespoons olive oil
2 cups lentils soaked in water overnight
3-4 teaspoons mild curry
2 teaspoons tomato paste
Salt and pepper to taste
1 8 oz container plain yoghurt
3-4 tablespoons fresh parsley
6 quarts vegetable broth
Preparation
Remove the core of the tomatoes and dice them into 1 inch cubes. Simmer onions and garlic in olive oil for about 2 minutes. Add the strained soaked lentils. Add curry and tomato paste. Let is slightly simmer. Add broth. Boil on medium heat for 10-12 minutes. Add potatoes, carrots, celery and leek and salt and pepper to taste. Let this slightly boil for 20 minutes. Add tomatoes and diced plums. Let it simmer for another 5 minutes. Taste again for salt and pepper flavor. Serve in bowls with yogurt and parsley as a garnish. You have a nice meal for the cooler evenings of fall.
