Cooking with Klaus – Exotic Potato Dish

Ingredients (for 4 people)

1 teaspoon ginger, or less to taste
8 shallots, chopped
1 clove garlic, diced
1 red chili, chopped
1 ½ pounds potatoes
2 cups red bell peppers, chopped into 1
inch squares
2 tablespoons olive oil
Salt, pepper, ground white pepper and
sugar to taste
2 cups coconut milk
4 cups vegetable broth
¾ pounds prawns
4 stalks of coriander
¼ cup lemon grass, if you want to add it

 

Preparation

Peel ginger and finely dice it. Peel potatoes and cut into ½ inch pieces. Heat olive oil to medium in a pot. Add garlic, shallots, ginger and chili and let simmer on medium heat for 3 minutes. Add potatoes. If you have lemon grass, and like the taste, you can add ¼ cup diced at this time. Let it simmer for 2-3 minutes. Add salt, pepper, ground white pepper and sugar. Now add coconut milk and vegetable broth. Bring it to boil. Put a lid on pot and let it simmer for 15-29 minutes. Add prawns that are cleaned. Add red bell pepper. Bring to boil and let it simmer for 5 more minutes.

Season again to match your taste. Garnish with coriander leaves. If you like Indian style foods, you can also add curry when adding spices.
